Taken from: https://www.onceuponachef.com/recipes/key-lime-pie.html

'''Ingredients:'''
For the Crust

* 1-1/2 cups finely crushed graham cracker crumbs, from about 12 whole graham crackers
* 1/3 cup packed light brown sugar
* 4 tablespoons unsalted butter, melted
* Optional: Salt, sliced almonds

For the Filling

* Two 14-oz cans sweetened condensed milk
* 1 cup plain Greek yogurt (2% or whole milk)
* 1 tablespoon grated lime zest
* 3/4 cup fresh lime juice
* Optional: 1 tsp salt

For the Topping

* 1 cup cold heavy cream
* 2 tablespoons confectioners' sugar
* 1 teaspoon grated lime zest
* 8 to 10 thin lime slices

'''Method:'''
For the Crust

* Preheat oven to 375 °F and set an oven rack in the middle position.
* In a medium bowl, combine the graham cracker crumbs, brown sugar, and melted butter; stir with a fork first, and then your hands until the mixture is well combined. Using your fingers and the bottom of a glass or dry measuring cup, press the crumbs firmly into the bottom and up the sides of a 9 x 1.5-inch pie pan. The crust should be about ¼-inch thick. (Tip: do the sides first.)
* Bake for 10 minutes, until just slightly browned. Let the crust cool on a wire rack.

For the Filling

* Lower the oven temperature to 350°F.
* In a large bowl, whisk together the sweetened condensed milk, yogurt, lime zest, and lime juice. Pour the thick mixture into the warm graham cracker crust. Bake for 15 minutes, until the filling is almost set; it should wobble a bit. Let cool at room temperature for 30 minutes, then place in the refrigerator to chill thoroughly, about 3 hours.

For the Topping

* In the bowl of an electric mixer, beat the heavy cream until soft peaks form. Add the confectioners’ sugar and beat until medium peaks form. Top the pie with the whipped cream. Decorate with the lime zest and lime slices. Store the pie in the refrigerator until ready to serve. Slice the pie into wedges, wiping your knife clean between slices, and serve cold.

'''Notes:'''
* Used more than 3/4 cup lime juice -- probably closer to 1 cup. Maybe 10 limes?
* Add salt to crust and filling
* First attempt was with almond whipped cream -- a winner!

== Ingredients: ==

* 3 cups (361g) King Arthur Unbleached All-Purpose Flour
* 1 tablespoon (14g) sugar
* 1 1/2 teaspoons salt
* 1/4 teaspoon baking soda
* 1 tablespoon instant yeast
* 1 cup (227g) milk
* 1/4 cup (57g) water
* 2 tablespoons (25g) vegetable oil or olive oil
* cornmeal, to sprinkle in pan

== Process: ==

* Whisk together the flour, sugar, salt, baking soda, and instant yeast in a large mixing bowl, or the bowl of a stand mixer.

* Combine the milk, water, and oil in a separate, microwave-safe bowl, and heat to between 120°F and 130°F. Be sure to stir the liquid well before measuring its temperature; you want an accurate reading. If you don't have a thermometer, the liquid will feel quite hot (hotter than lukewarm), but not so hot that it would be uncomfortable as bath water.

* Pour the hot liquid over the dry ingredients in the mixing bowl.

* Using an electric beater, or stand mixer with beater attachment, beat at high speed for 1 minute; the dough will be smooth and very soft. If you don't have an electric mixer, beat by hand for 2 to 3 minutes, or until the dough is smooth and starting to become elastic.

* Lightly grease an 8 1/2" x 4 1/2" loaf pan, and sprinkle the bottom and sides with cornmeal.

* Scoop the soft dough into the pan, leveling it in the pan as much as possible.

* Cover the pan, and let the dough rise till it's just barely crowned over the rim of the pan. When you look at the rim of the pan from eye level, you should see the dough, but it shouldn't be more than, say, 1/4" over the rim. This will take about 45 minutes to 1 hour, if you heated the liquid to the correct temperature and your kitchen isn't very cold.

* While the dough is rising, preheat the oven to '''400°F'''.

* Remove the cover, and bake the bread for 22 to 27 minutes, till it's golden brown and its interior temperature is 190°F.

* Remove the bread from the oven, and after 5 minutes turn it out of the pan onto a rack to cool. Let the bread cool completely before slicing.

== Thoughts: ==
* Super easy to make
* Tasty but dense, maybe not great outside of toast applications
* My dough felt pretty stiff. I would try next time with more water/less flour to see if that allowed for more fluffing

== Ingredients: ==

* 1 cup + 2 tablespoons (303g) to 1 1/2 cups (340g) lukewarm water*
* 1 heaping tablespoon (32g) honey
* 2 1/4 teaspoons instant yeast
* 1 3/4 teaspoons salt
* 2 tablespoons (28g) soft butter
* 4 cups (482g) King Arthur Unbleached All-Purpose Flour
* 1/3 cup (47g) Baker's Special Dry Milk or 1/2 cup (42g) nonfat dry milk

== Process: ==

* Mix all of the ingredients in the order listed, and mix and knead — by hand, or using a stand mixer — to make a smooth dough. It won't be particularly soft nor stiff; it should be smooth and feel bouncy and elastic under your hands.

* Place the dough in a lightly greased bowl, or large (8-cup) measuring cup. Cover it, and let it rise for 60 to 90 minutes, till it's become quite puffy, though not necessarily doubled in size.

*Gently deflate the dough, and shape it into a fat 9" log. Place it in a lightly greased 9" x 5" or 10" x 5" loaf pan.

*Cover the pan, and let the dough rise for 60 to 90 minutes, till it's crowned 1" to 1 1/2" over the rim of the pan. Towards the end of the rising time, preheat the oven to '''350°F'''.

* Bake the bread for 20 minutes. Tent it lightly with aluminum foil, and bake for an additional 15 to 20 minutes, till it's golden brown. An instant-read thermometer inserted into the center will read 195°F to 200°F.

* Remove the bread from the oven, and turn it out onto a rack to cool. When completely cool, wrap in plastic, and store at room temperature.

== Thoughts: ==
* Delicious!!!
* An egg wash may make the top crust look more attractive
* Per comments, many people double the recipe and divide among 3 loaf pans for more regular-sized loaves.

* 2 whole Eggs
* 1/3 cup Sugar
* 3-1/2 cups All-purpose Flour
* 1 teaspoon Salt

== Process: ==

* Melt butter with milk. Heat until very warm, but don't boil. Allow to cool until still warm to the touch, but not hot. Sprinkle yeast over the top, stir gently, and allow to sit for 10 minutes.

* Combine flour and salt.

* In the bowl of an electric mixer, mix sugar and eggs with the paddle attachment until combined. Pour in milk/butter/yeast mixture and stir to combine. Add half the flour and beat on medium speed until combined. Add the other half and beat until combined.

* Switch to the dough hook attachment and beat/knead dough on medium speed for ten minutes. If dough is overly sticky, add 1/4 cup flour and beat again for 5 minutes.

* Heat a metal or glass mixing bowl so it's warm. Drizzle in a little canola oil, then toss the dough in the oil to coat. Cover bowl in plastic wrap and set it in a warm, hospitable place for at least 2 hours.

* Turn dough out onto the work surface. Roll into a neat rectangle no wider than the loaf pan you're going to use, and about 18 to 24 inches long. Smear with 2 tablespoons melted butter. Mix sugar and cinnamon together, then sprinkle evenly over the butter-smeared dough. Starting at the far end, roll dough toward you, keeping it tight and contained. Pinch seam to seal.

* Smear loaf pan with softened butter. Place dough, seam down, in the pan. Cover with plastic wrap and allow to rise for 2 hours.

* Preheat oven to '''350 degrees'''.

* Mix a little egg with milk, and smear over the top. Bake for 40 minutes on a middle/lower rack in the oven.

* Remove from the pan and allow bread to cool. Slice and serve, or make cinnamon toast or French toast with it.

Disclosure: The ingredients I'm about to list will make a completely full crock-pot worth of stuff. I'd suggest dropping it by a little but I'll leave it to you what you'd like to drop.

'''Ingredients''':

* 1 lb lean ground beef;
* 2 onion, chopped;
* 4 garlic cloves, minced;
* 2 (28 ounce) can tomato sauce;
* 2 (6 ounce) can tomato paste;
* 24 ounces cottage cheese (we used 2%);
* 1 cup grated parmesan cheese or 1⁄2 cup asiago cheese;
* 24 ounces whole grain lasagna noodles, uncooked;
* 32 ounces shredded mozzarella cheese;
* 2 Zucchini;
* 1 lb Mushrooms, chopped;
* 2 Jalapenos;
* 1 Bunch of Cilantro, fine

'''Seasonings:'''

* Salt;
* Black Pepper;
* Crushed Red Pepper Flakes;
* Zatar / Sumac;
* Oregano;
* Thyme

'''The Sauce:'''

# Prep the Onion, Garlic, Zucchini, Mushrooms, Jalapenos and Cilantro.
# Get a pan hot and start browning the beef.
# Season the beef with a teaspoon of salt and a thorough distribution of pepper.
# Addendum: The texture you want the zucchini to be at determines when you add them. If you want them soft, put them in with the beef, or even before. If you want slightly firm (al dente) save it to go in with everything else.
# Add in the onions. Stir until onions are becoming transparent.
# Add in all the rest of the prepped veggies.
# Season with a teaspoon of salt, a goodly amount of black pepper (twenty grinds or so), two teaspoons red pepper flakes, one tablespoon Zatar, one tablespoon thyme, one tablespoon oregano.
# Keep stirring until you see that all the meat is cooked.
# Add in (perhaps transfer to a separate giant pot first) the tomato sauce and tomato paste. Stir until merged. Heat until the sauce is hot.
# Season with about 8 more grinds of pepper, another tablespoon of Zatar and another two teaspoons of oregano and thyme.

'''The Assembly:'''
10 PUT a layer of the sauce in the crock pot
20 PUT a double-layer of the noodles on top (break the noodles to make the sizing work)
30 PUT a layer of cheese (cottage and mozzarella and parm)
40 IF room in crock pot > desired THEN GOTO 10 END IF

Basically just keep repeating until you're at the height you want.

Cook on Low for 4-5 Hours. Check the noodles for done-ness.

Enjoy and give feedback; seasonings were wildly approximate.
