Ingredients
- 1 can chickpeas
- 1 5- to 6-ounce cans water-packed chunk light tuna, drained and flaked (I used costco albacore, 7oz)
- 1 large red bell pepper, finely diced
- ½ cup finely chopped red onion
- ½ cup chopped fresh parsley
- 4 tablespoons capers, rinsed
- ½ cup lemon juice
- 2 tablespoons extra-virgin olive oil
- 1 Freshly ground pepper, to taste
- 1 teaspoon salt
- 6 cups mixed salad greens
Process
- Chop onion and mix with lemon juice, salt, olive oil. Let sit.
- Drain chickpeas and capers
- Chop veggies and herbs
- Mix in tuna, chickpeas/capers, onion vinaigrette
