Pizza Dough
- 361g 00 flour
- 2 tsp yeast
- 1 tsp salt, testing 1.5
- 1 tsp sugar or honey, testing 1.5
- 2 tbsp olive oil
- 198g to 227g lukewarm water (more as needed)
Knead with machine on speed 4 for 6 minutes
Rise until doubled, approx 45 minutes, punch down, let rise another 45 minutes
Testing 500 pre-toast, flip crust, top and bake
