Chow Mein Casserole

  • 250 g ground beef
  • 1/2 onion, chopped
  • 1 jalapeno, chopped
  • 1 can chicken and rice soup
  • 1 can cream of chicken soup
  • 2 cups frozen mixed veggies
  • 1 can chow mein noodles


  1. Preheat oven to 425 degrees F.
  2. Saute ground beef, onion and jalapenos until meat is cooked through and onions begin to brown.
  3. Add both cans of soup, 5/6 can of water, and mixed veggies. Mix until combined.
  4. Add 3/4 can of chow mein noodles and mix.
  5. Cook over high heat until bubbling.
  6. Pour into a greased casserole dish.
  7. Top with remaining noodles.
  8. Bake for 15 minutes, until bubbly!
