Chow Mein Casserole
- 250 g ground beef
- 1/2 onion, chopped
- 1 jalapeno, chopped
- 1 can chicken and rice soup
- 1 can cream of chicken soup
- 2 cups frozen mixed veggies
- 1 can chow mein noodles
- Preheat oven to 425 degrees F.
- Saute ground beef, onion and jalapenos until meat is cooked through and onions begin to brown.
- Add both cans of soup, 5/6 can of water, and mixed veggies. Mix until combined.
- Add 3/4 can of chow mein noodles and mix.
- Cook over high heat until bubbling.
- Pour into a greased casserole dish.
- Top with remaining noodles.
- Bake for 15 minutes, until bubbly!
