Better than Berts Salsa

Ingredients

  • 1 large can tomato puree
  • 2 firm plum tomatoes - cubed
  • 1/2 red onion - finely chopped
  • 4 tbsp cilantro - finely chopped
  • 1 jalapeno - finely chopped
  • 3 tbsp hot sauce
  • 2 tsp salt
  • 1 tsp pepper

Method

  • Blanch onion
  • Add half each of remaining ingredients and cook slightly
  • Add tomato puree
  • Bring to a boil
  • Remove from heat
  • Add remaining ingredients and mix thoroughly

Modifications

  • Use food processor to get onion, jalap, and cilantro into fine bits
  • Ensure onions are cooked through until lightly browning
  • Reduce salt to 1.5 tsp
  • Add 1 tsp sugar
