Chicken Parmesan Casserole

Make spicy?

  • 2 breasts fully-cooked chicken, shredded or cubed
  • 0.5 jar (14 ounces) of marinara sauce
  • 0.25 cups shredded or grated Parmesan cheese
  • 0.75 cups shredded mozzarella cheese
  • 0.5 cup panko or whole wheat bread crumbs (Here is how to make your own)


  1. Cook chicken with generous doses of Italian seasoning, salt and pepper
  2. Preheat oven to 350 degrees.
  3. Grease an 8x8 casserole dish with cooking spray.
  4. Layer the chicken in the bottom. Dump in the marinara sauce and mix with the chicken. Next, top with both cheeses until all the chicken is covered.
  5. In a small bowl, mix the breadcrumbs and a dash of salt and pepper together.
  6. Sprinkle the seasoned breadcrumbs over the top. Sprinkle with Italian seasoning
  7. Bake for about 20-25 minutes or until golden on top and bubbling on the sides.
