Cynthia's Broccoli Cheddar

Ingredients
- 1/4 cup butter
- 1/2 cup diced onions
- 1 cup shredded carrots
- 2.5 cups broccoli florets
- 1.5 cups chicken broth
- 1 cup milk
- 1 cup heavy whipping cream
- 1/4 cup all purpose flour
- 1.5 tsp salt
- 1/2 tsp black pepper
- pinch of crushed red pepper flakes
- 2 cups shredded cheddar cheese
Process
- Over medium heat, melt butter.
- Add onions, carrots, and broccoli. Cook to soften, about 5 minutes
- Add flour, stirring continuously
- Slowly add in broth, milk, and cream
- Add salt, pepper, and red pepper flakes
- Stir and heat over medium flame until thickened -- 10-15 minutes
- Once thick, add cheese and stir until smooth
Tips
- Sub whole milk for both milk/cream components
- 2 cups of cheese was a lot. Maybe 1 or 1.5?
