Sweet potato & bell pepper jumble (Hello Fresh)

Ingredients:

  • 2 sweet potatoes
  • 1 red bell pepper
  • 1 green bell pepper
  • Butter
  • 1 clove garlic
  • Lime zest


Method:

  • Preheat oven to 450 degrees
  • Slice and dice bell peppers and sweet potatoes to 1/2 in pieces
  • Toss on a baking sheet with olive oil, salt, and pepper
  • Bake 20-25 minutes, until browned and tender, stirring halfway through
  • While baking, combine 1 tbsp melted butter, 1 pinch of minced garlic, and 1 pinch of lime zest
  • When roasting is done, toss veggies in the garlic/lime butter
  • Season with salt and pepper as needed
