White Chocolate Lemon Brownies

Ingredients

  • 300g Sugar
  • Zest of 3 lemons
  • 150g of Egg (about 3)
  • 170g of real white chocolate
  • 170g of butter
  • 287g of AP flour
  • 7g of salt
  • 39g of lemon juice

Method

  1. Preheat oven to *350 degrees*
  2. In mixer, whisk together suagr and lemon zest until pale yellow
  3. Add eggs to the sugar mix in 3 additions
  4. Whip mixture on medium until pale - ribbon stage
  5. In a separate bowl, melt together butter, lemon juice, white chocolate, and salt
  6. Slowly add melted butter mixture to egg/sugar mixture
  7. Fold flour in, in thirds
  8. Transfer to a 9"x9" baking pan, bake for 32 minutes
