Ingredients:
- 1 red bell pepper
- 1 yellow/white onion
- 1 lime
- cilantro
- 1 cup jasmine rice
- 1/2 oz peanuts
- 10 oz chicken breast
- 4 tbsp sweet soy glaze (kikkoman)
- 1 oz sweet thai chili sauce (kikkoman)
Method:
- Get rice going
- While rice cooks, add peanuts to nonstick pan over medium-high heat.
- Add 1 tsp sugar and 2 tbsp water.
- Cook, stirring often, until peanuts are coated and lightly browned (3-5 minutes).
- In nonstick pan, add thinly sliced bell peppers and onions. Season with salt and pepper. Cook until soft and lightly browned (6-9 minutes).
- Transfer veggies to a bowl.
- In the same pan, add thinly sliced chicken. Season with salt and pepper. Cook until cooked through (4-6 minutes).
- Stir in cooked veggies, then add sweet soy glaze, chili sauce, and 1 tbsp butter.
- Cook until moisture is thoroughly coated (1-2 minutes)
- When rice is done, mix in 1 tbsp butter and the zest of a lime (to taste). Season with salt.
- Divide rice between bowls, top with chicken mixture, peanuts, and cilantro.
- Serve lime wedges on the side.
