Ingredients:

  • 1 red bell pepper
  • 1 yellow/white onion
  • 1 lime
  • cilantro
  • 1 cup jasmine rice
  • 1/2 oz peanuts
  • 10 oz chicken breast
  • 4 tbsp sweet soy glaze (kikkoman)
  • 1 oz sweet thai chili sauce (kikkoman)


Method:

  • Get rice going
  • While rice cooks, add peanuts to nonstick pan over medium-high heat.
  • Add 1 tsp sugar and 2 tbsp water.
  • Cook, stirring often, until peanuts are coated and lightly browned (3-5 minutes).
  • In nonstick pan, add thinly sliced bell peppers and onions. Season with salt and pepper. Cook until soft and lightly browned (6-9 minutes).
  • Transfer veggies to a bowl.
  • In the same pan, add thinly sliced chicken. Season with salt and pepper. Cook until cooked through (4-6 minutes).
  • Stir in cooked veggies, then add sweet soy glaze, chili sauce, and 1 tbsp butter.
  • Cook until moisture is thoroughly coated (1-2 minutes)
  • When rice is done, mix in 1 tbsp butter and the zest of a lime (to taste). Season with salt.
  • Divide rice between bowls, top with chicken mixture, peanuts, and cilantro.
  • Serve lime wedges on the side.
