Better than Berts Salsa
Ingredients
- 1 large can tomato puree
- 2 firm plum tomatoes - cubed
- 1/2 red onion - finely chopped
- 4 tbsp cilantro - finely chopped
- 1 jalapeno - finely chopped
- 3 tbsp hot sauce
- 2 tsp salt
- 1 tsp pepper
Method
- Blanch onion
- Add half each of remaining ingredients and cook slightly
- Add tomato puree
- Bring to a boil
- Remove from heat
- Add remaining ingredients and mix thoroughly
Modifications
- Use food processor to get onion, jalap, and cilantro into fine bits
- Ensure onions are cooked through until lightly browning
- Reduce salt to 1.5 tsp
- Add 1 tsp sugar
