Ingredients

  • 1/4 cup butter
  • 1/2 cup diced onions
  • 1 cup shredded carrots
  • 2.5 cups broccoli florets
  • 1.5 cups chicken broth
  • 1 cup milk
  • 1 cup heavy whipping cream
  • 1/4 cup all purpose flour
  • 1.5 tsp salt
  • 1/2 tsp black pepper
  • pinch of crushed red pepper flakes
  • 2 cups shredded cheddar cheese


Process

  • Over medium heat, melt butter.
  • Add onions, carrots, and broccoli. Cook to soften, about 5 minutes
  • Add flour, stirring continuously
  • Slowly add in broth, milk, and cream
  • Add salt, pepper, and red pepper flakes
  • Stir and heat over medium flame until thickened -- 10-15 minutes
  • Once thick, add cheese and stir until smooth


Tips

  • Sub whole milk for both milk/cream components
  • 2 cups of cheese was a lot. Maybe 1 or 1.5?
