Firecracker Meatballs with roasted carrots - Hello Fresh
Ingredients:
- 1 bunch carrots
- 2 scallions
- 1 thumb of ginger
- 2 tbsp mayonnaise
- 2 tbsp sour cream
- 2 tsp honey
- 2 tbsp soy sauce
- 1 tsp sriracha
- 10 oz ground beef
- 1/4 c panko bread crumbs
- 1 tsp korean chili flakes
Method:
- Preheat oven to 425 degrees
- Get some rice going to serve with the meatballs
- Trim, peel, and cut carrots on a diagonal into 1/2 inch pieces
- Toss carrots on a baking sheet with salt, pepper, and olive oil. Push to one side of the sheet. Roast for 10 minutes
- In a bowl, combine mayonnaise, sour cream, honey, 2 tsp soy sauce, and sriracha. Set aside for saucing later.
- In a large bowl, combine beef, panko, ginger, scallion whites, remaining soy sauce (4 tsps), 1/2 tsp salt, and pepper
- Form into 10-12 meatballs
- Once carrots have roasted 10 minutes, add meatballs to sheetpan. Cook for 14-16 additional minutes until cooked through.
- To serve, season rice with salt and pepper. Divide between bowls.
- Add meatballs and carrots to bowls.
- Top with sauce
- Sprinkle with scallion greens and chili flakes
